Smoking imparts anti-oxidative and anti-microbial compounds into food, as well as carbonyl compounds that cause the traditional colour and texture of smoked foods. However, smoke also deposits harmful chemicals, such as Polycyclic Aromatic Hydrocarbons (PAH), some of which are considered carcinogenic.
